Soup

Ingredients

Saute 1 chopped onion,
3 sticks chopped celery,
2 diced carrots,
1/2 red bell pepper
4 whole, peeled garlic cloves
3 slices of diced bacon.
tin tomatoes,
2 medium diced potatoes,
water
1 tin of white beans,
1/4 cup chopped fresh oregano
1/4 cup fresh choped basil,
1/4 teaspoon paprika,
salt and pepper.
Cheese to garnish

One pot veggie-based soup, quick to prepare (30 mins from start to table), easy to store ingredients, low maintenance to cook and make sure you don’t neglect your 5 serves of vegies while out on the road! Its a  good change from the communal bbq snag-fest, although in a iron pot, it can be cooked in manly fashion on the bbq.

Shute onion, celery, carrots, pepper, garlic & bacon
Add tin tomatoes and simmer.
Add 2 medium diced potatoes & enough water to create a thickish soup consistency.
Add 1 tin of white beans
1/4 cup chopped fresh oregano
1/4 cup fresh choped basil
1/4 teaspoon paprika
salt and pepper.
Simmer slowly until potato cubes soften, but retain shape and texture.

Sprinkle with cheese & Serve with ‘doorsteps’ (thick fresh breadchunks) and dish up.
Be brave and eat the garlic cloves! Wash your one knife and one pan and get out there!
