A lot is written about how to cook this classic Italian dish that involves intense stirring and attention. But in true Australian Doorstep fashion, we’ve adapted it to life on the open road. Follow our homespun version and you’ll see how incredibly simple and tasty it can be.
Cooking: Place rice into the boiling water. Cook until 80% cooked. Turn down to simmer, until the water is almost completely absorbed. When at this point, add can of mushroom soup.
Stir and simmer for around 5 minutes – try not to overcook the rice. Keep it with just a little bite.
Add fresh chopped mushrooms – stir in and let cook through as you take the pan off the heat.
Top with fresh grated parmesan cheese
